Directs and coordinates the food and beverage operations of the restaurants, bars and in-room dining to include food preparation and food/beverage service to maintain established operational standards and maximize profits for the hotel. Greets guests and monitors staff and guest interaction.Other Job Tasks:• Arranges for maintenance and/or repair of restaurant/kitchen/lounge equipment.• Makes hiring and retention decisions.• Assists the department heads in achieving budgeted profit objectives while maintaining desired standards of food quality, service, and cleanliness.• Works with managers, stewarding department, and supervisors to keep restaurant meeting health and sanitations standards.• Reviews weekly staffing to meet forecasted business.• Regularly reviews guest comment cards to evaluate guest satisfaction of all restaurants, bars and in-room dining. Recommends changes in operating procedures and marketing strategies as warranted.• Requisitions and receives products.• Provides recommendations on menu and wine selection.• Assists in monitoring department payroll closely including weekly/biweekly time sheets and submits daily tip reports to Payroll.• Assists in the annual budgeting process and with capital expenses, revenues, profitability and direct expenses.• Writes Profit and Loss commentary.
